Happy New Year!  Take these recipes along with the grocery list provided to start your year off right!  Healthy and easy, these five meals are planned for prep-ahead freezer-to-crockpot, using ingredients found at your local ALDI store!

 

CROCKPOT CHICKEN FAJITAS

Yields: 6 servings (using two pounds of chicken)

Ingredients:

  • 1-2 pounds boneless skinless chicken breasts, cut into strips
  • 3 medium-sized sweet bell peppers (mix of colors), sliced
  • 1 large sweet yellow onion, sliced
  • 2 large cloves of garlic, minced
  • 1 tablespoons honey
  • The juice from 1 lime
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoons paprika
  • 1/4 teaspoon crushed red pepper flakes

To Freeze and Cook Later:

  1. Combine all ingredients in a gallon-sized plastic freezer bag and freeze for up to three months.
  2. When ready to eat, thaw overnight in the refrigerator.
  3. The morning of cooking, pour contents of freezer bag into your crockpot and cook on “low” setting for 6 hours or until chicken is tender.

Serve on tortillas or rice with your favorite fajitas toppings, like shredded cheese, salsa, and guacamole.

 

CROCKPOT TURKEY BLACK BEAN CHILI

Ingredients:

  • 1 pound of ground turkey
  • 28oz can of tomato sauce
  • 2 cans of black beans (15oz each), drained and rinsed
  • 1 can of petite diced tomatoes (14.5oz), undrained
  • 1 2/3 cup frozen corn
  • 2 large cloves of garlic, minced
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoon ground oregano
  • 1/4 teaspoon crushed red pepper flakes

Directions:

  1. Add all ingredients to your slow cooker.
  2. Cover and cook on low 6-8 hours.
  3. Break apart turkey and stir.

Serve with shredded cheese and chips!

 

CROCKPOT MEATBALL SOUP WITH GARDEN VEGGIES

Yields: 6 servings

Ingredients:

  • 1 pound small meatballs
  • 24oz jar of pasta sauce (about 2.5 cups)
  • 4 cups low sodium chicken broth
  • 1 pound carrots, peeled and chopped
  • 3 cups green beans, ends cut off and cut into bite-sized pieces
  • 1 medium-sized zucchini, ends cut off and cut into bite-sized pieces
  • 1 medium-sized yellow onion, diced (about 1 cup)

To Freeze and Cook:

Combine all ingredients (except chicken broth) in a gallon-sized plastic freezer bag.  Remove as much air as possible, seal, and freeze for up to three months.

Directions:

  1. Combine all ingredients in slow cooker.
  2. Cover, and cook on “low” for 8 hours or until veggies are soft.

 

CROCKPOT BEEF ENCHILADA STACK

Yields: 4 servings

Ingredients:

  • 1 pound 85% lean ground beef
  • 15 oz can black beans, drained and rinsed
  • 3 medium-sized tomatoes, cored, seeds and juices removed, and chopped
  • 4 oz can diced green chilies
  • 1 tsp. garlic powder
  • 3/4 tsp onion powder
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8-10 small corn tortillas
  • 8 oz. mild cheddar cheese, shredded (about 2 cups)

Prep

  1. Label freezer bag
  2. In large bowl, combine all ingredients, except tortillas and cheese.
  3. Layer ingredients on piece of plastic wrap in this order:
  • 1 tortilla
  • Top with beef mixture and 1/4 cup cheese.  Flatten
  • Add another tortilla and continue repeating layers until beef mixture is gone.
  • Top with final tortilla
  • Fold plastic wrap over stack and around it.
  • Cover stack with freezer bag, seal (get air out), freeze for up to three months.

Cook:

  • The night before cooking, move bag to the refrigerator to thaw.
  • The morning of cooking, carefully remove stack from bag and add to crockpot
  • Cover, and cook on “low” setting for 6-8 hours or until beef is cooked through.

 

CROCKPOT CHICKEN TERIYAKI

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1/2 cup honey
  • 1/2 cup low sodium soy sauce
  • 1/4 cup rice wine vinegar (substitute: red wine vinegar)
  • 1 small onion, diced
  • 1 large clove garlic, minced
  • 2 tsp. ginger (or 1 inch fresh ginger root, peeled and minced)
  • 1/4 tsp. black pepper
  • One bag frozen stir fry veggies (approx. 14 oz)

Prep:

  • Label your freezer bag.
  • Add all ingredients to your freezer bag, adding the chicken last so it’s the first thing poured into your crockpot.
  • Remove as much air from bag as possible, seal, lay flat in your freezer.

Cook:

  • The night before cooking, move frozen bag yo your refrigerator to thaw.
  • The morning of cooking, pour contents of freezer bag into your crockpot.
  • Cook on “low” setting for 6-8 hours, or until chicken is cooked through.

MEAT

3 cans black beans (15 oz each)

15 oz can Cannellini beans (white kidney beans)
4 cups of chicken broth *not needed until day of cooking
24 oz jar of pasta sauce (any kind)
4 oz can diced green chilies
FROZEN
1 2/3 cup frozen corn
1 bag frozen stir fry veggies (approx. 14 oz)
MISC
1 cup + 1 Tbsp. honey
1 Tbsp. Apple cider vinegar
1 gallon-sized Freezer bags
8-10 small corn tortillas
1/2 cup low sodium soy sauce
1/4 cup rice win vinegar (substitute: red wine vinegar)
Plastic wrap
Permanent marker for labeling bags

ITEMS NEEDED DAY OF COOKING
4 cups chicken broth (for meatball/veggie soup)
Side dishes: brown rice for the chicken teriyaki, tortillas or rice for chicken fajitas (along with toppings, like shredded cheese, salsa, and guacamole), tortilla chips for turkey black bean chili
